Panna Cotta

The Recipe:

In a small bowl pour 1/2 cup of raw milk. Add 2 T of Great Lakes non-hydrolyzed (orange container) gelatin and let set for 10 minutes

In a saucepan stir together:  2 1/2 cups of raw heavy whipping cream or organgic heavy whipping cream (check ingredients carefully!) with 1/2 cup plain white sugar. Bring to full boil, watch carefully. When mixture comes to boil add milk and gelatin mixture. Stir until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in 1 T of vanilla. Pour in ramekins or and 8 X8 glass dish greased lightly with coconut oil. Let stand until room tempersture, then refrigerate. Be creative with garnish: berries, drizzle with chocolate. A variation for the holidays: is to  use substitute  1 Cup Eggnog  and then only use 1 1/2 cup heavy whipping cream.
