My Morning Ritual – MY Perfect Cup of Coffee!

I sit every morning at my computer in my lovely studio in the heart of downtown Wauconda. I answer emails and check updates on Facebook, while sipping the most perfect cup of coffee – now what makes this cup so perfect has taken some time to perfect.  First it starts with the coffee and I have used Rogers Family Coffee now for over 5 years. I like the the 3-pound bag of Organic San Franscisco Rainforest. I am not a fan of strong coffees – this is fairly mild. I use 1 T per 8 oz of water – the water I use s Mountain Valley Spring, I have this water delivered to my home (and studio) in 2.5 gallon glass bottles.  While the coffee is brewing I add hot water in my Thermos mug and let sit for 10 minutes. Now the “putting” together of that perfect cup – empty the hot water – pour about 1/3 cup of coffee in your favorite mug. I add to this 1 T of coconut oil, now stir until coconut oil is blended. I then add (and this is based on how you take your coffee)  1 T simple syrup and 2 T raw heavy whipping cream – and stir until those ingredients are blennded. Add the remainder of the brewed coffee. It is my opinion that coffee needs to be hot and this method has proven successful for me. Enjoy!

Chocolate Marshmallows

I have always wanted to try chocolate marshmallows and this weekend I did and they came out awesome!!

In a mixing bowl place 1/2 cup water. Layer on top  3 T non-hydrolysized Great Lakes Gelatin – (orange canister). Let sit for 10 minutes.

In a saucepan combine 1/2 cup water, 2 cups sugar and 2 T raw organic cocoa (this gives a mild flavor of chocolate – you may try more). Heat to 220 degrees.

Add sugar and chocolate mixture to gelatin and water. Mix until stiff- about 5-10 minutes, depending on your mixer. Place into a well greased 8 X 8 pan. I used coconut oil. When cooled place in refrigerator for a few hour and then cut. Enjoy!

Panna Cotta

The Recipe:

In a small bowl pour 1/2 cup of raw milk. Add 2 T of Great Lakes non-hydrolyzed (orange container) gelatin and let set for 10 minutes

In a saucepan stir together:  2 1/2 cups of raw heavy whipping cream or organgic heavy whipping cream (check ingredients carefully!) with 1/2 cup plain white sugar. Bring to full boil, watch carefully. When mixture comes to boil add milk and gelatin mixture. Stir until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in 1 T of vanilla. Pour in ramekins or and 8 X8 glass dish greased lightly with coconut oil. Let stand until room tempersture, then refrigerate. Be creative with garnish: berries, drizzle with chocolate. A variation for the holidays: is to  use substitute  1 Cup Eggnog  and then only use 1 1/2 cup heavy whipping cream.

How Do You Get Calcium?

How many of you purchase expensive calcium supplements?

Well there is nothing like using the ENTIRE egg. Egg shells are one source of calcium and here is how I do it:

Take the membrane out of the egg and set aside. Wait until you have accumulated 8-10 egg shells. Place on cookie sheet and put into a 200 degree oven for 5-10 minutes. Then grind in a coffee grinder. I take 1/4 teaspoon three times a day.

Homemade Custard

2 Cups Organic Pasteurized Milk (Why Waste Raw!)

1/4 Cup White Sugar

4 TBSP Hydrolyzed Gelatin

1/8 tsp salt

3 Medium or Large Eggs

1/2 – 1 TBSP Vanilla (or any other extract like almond or hazlenut)

Preheat oven to 325. Blend milk, sugar, salt and gelatin.

In separate bowl beat eggs and add to milk mixture and mix. You may top with cinnamon. Pour mixture into and 8 x 8 glass dish. Place 8 x 8 in another pan that contains water. Cook for 60 minutes or until golden brown on top. Insert knife to test – knife must come out clean. Eat alone or whipped cream or fruit or homemade jam.

How To Make Marshmallows

Here is the recipe:

1/2 Cup Water
3 TBSP Non-Hydrolized Great Lakes Gelatin
Put water in large bowl and sprinkle gelatin over it. Make sure the gelatin is spread over the entire surface of the water. Let sit for 30 minutes.

2 Cups Organic Pure Cane Sugar
1/2 Cup Water

Cook the sugar and water together until it reaches 240 degrees – need a candy thermometer.

Pour hot sugar mixture over the gelatin and water and beat on high for about 10 minutes – maybe a bit more – until it peaks.

For flavoring add juice of half a lime or 1 tsp of vanilla -add flavoring after the mixture peaks

Put in 9 x 12 glass pan that has been coated with coconut oil. Let sit for 12 hours and then cut with a scissors – store in an air tight container

When you feel your blood sugar drop – have a small square.

Wacky Cake – Gluten and Dairy Free

3/4 to 1 Cup Organic Sugar (or Stevia to taste)
1 TBSP. Vinegar
1 ½ Cup Bob’s Red Mill Gluten Free Flour
1 tsp. Vanilla
3 TBSP. Powdered Organic Cocoa
6 TBSP. Coconut Oil
1 tsp. Baking Soda
1 Cup Water
½ tsp. Salt

Sift together in an un-greased 8X8X2 pan, sugar, flour, cocoa, soda and salt.
Make 3 wells in the flour mixture. In well number 1, put the vinegar. In well number 2, put the vanilla. In well number 3, put the oil. Pour water over all. Mix with a fork until lumps are gone. Bake at 350 for 25-30 minutes. The cake should not remain dented when touched lightly. Upon cooling, the center of the cake will fall. Cake should sit for at least 8 hours before eating to allow the chocolate flavor to intensify.

Gluten Free Raw Sweet Treats

1 1/3 Cups Almond Flour
Pinch of Salt
8-12 Dates – soak first and take out pits
1/3 Cup Raw Organic Chocolate
2 TBSP Water
1 TBSP Vanilla
1 Tsp Cinnamon

In a food processor, combine the almond flour and dates, add the remaining ingredients Taste and see if it is sweet enough – if not you can add more dates. Roll in to 1/2 inch balls – keep in frig.
